Abstract

L'invention concerne un support de biomasse constitué d'un système de fibres disposées les unes par rapport aux autres selon une orientation définie, certaines de ces fibres au moins étant agencées en boucles et/ou brins. Les fibres sont fabriquées dans un matériau approprié pour les micro-organismes, et elles sont, de préférence, agencées en fils de manière à former trois systèmes (11, 12, 13) de fils. Le premier système (11) comprend une rangée de boucles alternées formant le volume du support (1) de biomasse. Le deuxième système (12) de fils croise transversalement le premier système. Le troisième système (13) enveloppe le premier et le deuxième système (11, 12). L'invention concerne également une méthode de colonisation du support de biomasse par des micro-organismes, ainsi qu'une méthode de fermentation d'un substrat fermentescible par des organismes vivants utilisés dans l'industrie de la fermentation, notamment la brasserie, pour la production de vin, de vinaigre et autres liquides fermentés dans lesquels le support (1) de biomasse est colonisé par des micro-organismes. Le substrat de fermentation est placé à la surface du support (1) de biomasse colonisé. Le processus de fermentation provoque l'émission de CO2, qui agite le substrat, et garantit le contact continu de la surface du support (1) de biomasse avec le substrat, ce qui accélère et intensifie le processus de fermentation. L'invention concerne enfin une méthode de désinfection du dispositif de fermentation, et un dispositif permettant de réaliser ladite méthode de fermentation et de désinfection.
