Definitions
- the subject of the invention is an anti - oxidation agent, designed particularly for applications in food and pharmaceutical products, especially products containing vegetable oils and animal fats.
- Polish - patent No 101 979 - an anti - oxidation agent designed for applications in fats, the main constituents of which are compounds with at least one active phenol group with molecular mass above 110.
- This antioxidant is extracted from thermal decomposition of wood, crude petroleum and most advantageously from lignite or cellulose materials. It is the object of this invention to provide an safe in use, non - toxic, devoid of smell, stable in the increased temperature (up to 80°) antioxidant of vegetable origin, designed for protection of nutritive or pharmaceutical products containing particularly vegetable oils especially bio-oils and animal fats.
- Natural antioxidant according to this invention contains as active agent a mixture of flavonoids extracted from skull-cup roots (Scutellaria Bailcalensis Georgi) where the antioxidant is applied to food or pharmaceutical products in amount no less than 0,0001% by weight in relation to mass of said food or pharmaceutical components.
- the products into which the antioxidant is introduced are being in various shape like liquids, creams, emulsions, paste, powder or jelly and the antioxidant is mixed or homogenised with said food or pharmaceutical components.
- Admixture of antioxidant according to the invention results in noticeable stability prolongation of food and pharmaceutical products, as well as in durability - mainly - owing to anti-oxidation protective action upon unsaturated fatty acids contained in the main products, as a result of its anti - free radicals property which slows down oxidation processes ( i.e. rancidity).
- the extract of scutellaria roots contains mixture of biologically active substances where these substances occur in great abundance in relation to other plants.
- the said active substances are baicalin , baicalein, wogonin, scutellarein , oroxiline and visciduline he application of the agent increases the resistance of food and other products against such degrading factors as temperature, time of storing, light, presence of oxygen and ions of metals in products containing unsaturated fatty acids.
- Active flavone compounds of scutellaria baicalensis especially their lipofile fraction contained in the extract have many active components.
- bailcalain being the major part of the mixture, intensively absorbs electromagnetic radiation within the range of 250 - 280 nm and 310 - 350 nm, and as it does not contain any phenol group in ring B is resistant to oxidation and very stable in increased temperature.
- scvutellaria extract owing to presence of carbonyl group in the heterocyclic ring and a hydroxyl group connected to benzene ring promotes the metal chelation. .
- Polyphenol compounds mainly those from flavone group present in the extract slow - down the free radicals activity generation, and what is more, they exhibit chelating activity in relation of iron and copper ions present in active enzyme centres , which ions catalyse the fat oxidation process.
- the natural substances contained in the antioxidant according to the invention do not feature any toxic action as opposed to synthetic equivalents, as well as they are entirely devoid of smell, but they feature many curing abilities instead, especially they are bacteriostatic, anti fungi, anti - allergic and antiphlogistic. This antioxidant and anti free radical action has been observed in human organism.
- Agent according to the invention when applied to the food products, has manifold action, not only that of antioxidant one but also the extract increases food nutrient value and it enhances food curing abilities, owing to the rich presence of flavone components.
- the extract imparts a yellow colour to food products to which it has been added because contained in the extract flavone compounds are at the same time a natural yellow dye.
- the intensity of the colour depends on the amount of the agent applied.
- This biologically active substance applied in the antioxidant according to invention, extracted from the Scutellaria bailcalensis roots is produced by method own to B.P.F. which assures preservation of all biological properties of extracted compounds.
- the extract is known in commercial form as ANTOKSYD - S, in the shape of yellow crystalline powder consisting of mixture of many compounds, with the main component being bailcalin, up to 75 % by weight, and many other like bailcalein, scutellarein, wogonin, sculpflawon, oroxiline, visciduline, all extracted from Scutellaria bailcalensis Georgi roots .
- the effectiveness of the agent can be enhanced by adding a mixture of flavone compounds in particular in application to food products containing water - oil phase like butter, mayonnaise, margarine .and so on.
- the antioxidant agent ANTOKSYD S is particularly recommended for applications to fatty food products , dairy products, processed vegetable and fruit like jellies and jams along with pharmaceutical and cosmetic products.
