Abstract

On coupe en tranches des viandes traitées au moyen d'une machine à trancher (13) formée d'un disque (16) pouvant tourner grâce à un moteur et de mécanismes de coupe (19, 20) montés sur le disque de manière à pouvoir tourner. Pour permettre leur entraînement, les mécanismes de coupe (19, 20) sont dotés sur leurs arbres de support d'un pignon (22, 24) qui, pendant la rotation du disque (16), roule par exemple le long d'une couronne dentée fixe (18) à denture intérieure (25) et coaxiale par rapport au disque rotatif (16). Du fait que le disque (16) et les mécanismes de coupe (19, 20) tournent en sens contraire, les tranches coupées tombent directement vers le bas.
