Abstract
Спосіб виробництва білтонгу з м'яса включає підготовку сировини, засолювання з додаванням нітриту натрію та суміші приправ або смако-ароматичних композицій, промивання проточною водою, нарізання на шматочки, сушіння. М'ясну сировину при засолюванні витримують протягом 12-24 годин в 0,3-4 % розчині харчових кислот та їх солей. До складу смако-ароматичної суміші додатково входять ензими папаїн або бромелайн в кількості 0,1-0,2 % до маси м'яса.
