Для виготовлення ординарного міцного білого вина типу портвейн як сировину використовують виноград аборигенних технічних сортів європейської групи, у наступних співвідношеннях: Семільйон - 5095, Альбіліо - 7/0. 2595, Верделіо - 2596, що вирощуються у Партенітській виноградній зоні Кримського півострова, який досягнув технічної зрілості. Далі технологічний процес передбачає подрібнення винограду з гребеневідділенням, сульфітацію одержаної м'язги сірчистим ангідридом із розрахунку 150мг/дм ЗУ, настоювання сусла на м'яззі протягом 24 годин. В цей період також відбувається нагрівання м'язги до 40-45 С протягом 5-6 годин. Далі відбувається пресування м'язги. Для виробництва вина відбирається сусло усіх пресових фракцій, а також 75 пресові фракції від виробництва інших виноматеріалів. Отримані фракції сусла об'єднуються та зброджуються на чистій культурі дріжджів при температурі не більше к2592С до накопичення спирту не менше 3,09506., після чого отримана суміш спиртується спиртом етиловим ректифікованим з урахуванням втрат спирту та наявності цукру, що забезпечує одержання у готовому вині необхідних кондицій. Освітлені виноматеріали знімаються з дріжджового осаду, егалізуються та купажуються. Купаж освітлених виноматеріалів готується на підставі аналітичних та органолептичних показників з урахуванням втрат спирту та цукру при технологічній обробці. Далі відбувається обробка теплом купажів при температурі 5523 з витримкою при цій температурі не менше 20 діб з наступним оклеюванням і самоохолодженням. Витримка оброблених виноматеріалів здійснюється у дубовій тарі при температурі 41593 загальним терміном до шести місяців. Після витримки у випадку прояви схильності до помутніння здійснюється дообробка виноматеріалів для досягнення розливостійкості. Готове розливостійке вино направляється на відпочинок терміном не менше, ніж на 10 діб та після контрольної фільтрації оброблені - виноматеріали направляються на розлив, пакування, маркування, транспортування та зберігання у відповідності з вимогами ГСТУ 202.002-96.For the production of ordinary strong white wine of the port type, grapes of aboriginal technical varieties of the European group are used as raw materials, in the following proportions: Semillion - 5095, Albilio - 7/0. 2595, Verdelio - 2596, grown in the Partenita grape zone of the Crimean Peninsula, which has reached technical maturity.
