Abstract
A method for making jellied fish includes preparation of jelly – mixing a gelling agent with salt, introducing thereof into hot fish broth, addition of spices and clearer, bringing to boiling, filtering and pouring fish, vegetables and lemon with ready jelly, cooling. As a gelling agent apple low-etherified pectin of NE-A2 type is used in the form of fine powder.
