Abstract

The invention relates to dairy industry and can be used at producing butter with improved consistence and enriched with inuline. A method of producing butter provides for making high-fat cream, normalizing, transformation of high-fat cream into butter, homogenization. In the process of homogenization inuline is introduced in the amount of 3-10 % of its content in the finished butter, and it is prepared from dried inuline by mixing thereof in the amount of 30-60 % of mass of preliminary pasteurized water, buttermilk, milk or cream with the temperature 45-75 °C and subsequent holding at the temperature for 20-60 minutes. Then the prepared solution is cooled to the temperature of homogenization of the butter.
