Abstract

The invention relates to the wine industry, in particular to the processes for preparation of cognacs. The process for preparation of cognac is realized by means of blending of cognac alcohols of different aging periods with the softened water, fortified water with sugar syrup and color, treatment of blend and after blend rest. The cognac alcohols of 4 years of aging in the amount of 70-80 %, and also cognac alcohols of 3 and 5 years of aging in the amount of 10-15 % each are used in a blend. The mentioned above alcohols are joined in the ratio of 1:1, and 6-12 month before the main blend, and than they are aged together in a presence of old staff.
