Abstract
The invention relates to food industry. A method to make bread includes dough kneading using flour, yeast, salt, a sugar substitute, fermenting thereof, handling, proofing and baking dough half-finished products. Sugar syrup of sugar sorghum is used as a sugar substitute, and prior to the dough kneading an activating nutrient mixture is prepared by means of mixing a part of the sorghum sugar syrup with water and flour.
