Abstract

Process for manufacturing a bakery (pastry) product and food product obtained by means of this process, which uses the ingredients and quantities (per cent by weight) as follows: whole wheat flour (< IMAGE >25.3%), water (< IMAGE >56%) salt (< IMAGE >2%) mother dough (< IMAGE > 10%) yeast (< IMAGE >3.5%) rye flour (< IMAGE >1%) powdered milk (< IMAGE >0.5%) gluten (< IMAGE >0.5%) oat flakes (< IMAGE >0.5%) bread-baking component (< IMAGE >0.5%) and malt flour (< IMAGE >0.2%) and it comprises the stages of: a) prekneading of that part of the flour which is of wholemeal type, water, salt, yeast and mother dough b) deposition and resting of the above dough/mixture in trays c) subsequent deposition of said dough/mixture in a kneader, with addition of the rest of the wholewheat flour and water rye flour, powdered milk, gluten, oat flakes, malt flour and bread-baking component d) second kneading e) division of the resulting dough into individual units, with possible second resting f) shaping of the food product and subsequent deposition in a raising chamber (fermentation chamber) g) final baking. Applicable to the bread-making (bakery) industry.
