Действие значительной массы активного угл  влечет за собой интенсивную очистку (адсорбцию вредных примесей) спирта, ускор ет окислительные и другие интермолекул рные процессы (как-то: этерификацию, сложноэфнрную конденсацию, образование ацеталей и др), имеющих огромное значение в улучшении дегустационных качеств водок и ведет в то же врем  к большей независимости от колебаний, как в качестве угл , так и в качестве очишаемых сортировок. Прил еиение активного угл  в больших количествах при его высокой стоимости может быть рентабельным только Б случае многократного использовани  его. После определенного времени работы ут( тер ет снособность интенсивно адсорбировать и окисл ть сиирта, придающие водке непри тный вкус и запах, утрачива  при этом (частично) н каталитические свойства . Приток воды на холодильник регулируетс  так, чтобы температура выход щего из холодильника спиртового дистилл та не поднималась выше 10-18° во избежание потерь спирта от испарени .
