Abstract
Process and agent for determination of pyro-grape acid or pyruvates which include pyruvate oxidase produced from pyruvate oxidase producing micro-organisms especially Aerococcus viridans IFO-12219 or IFO-12317 and with an optimal pH of 6.3-8.5. The agent includes FAD, in addition to pyruvate oxidase, thiamine pyrophosphate, phosphate and ion-releasing salt, chosen from the group which consists of calcium ions, cobalt ions, magnesium ions and manganese ions. Measurement is carried out on the amount of component used as oxygen or a produced component such as hydrogen peroxide.<IMAGE>
