Abstract
PURPOSE: To analyze pyruvic acid (P) effectively, by using a reaction system comprising P, obtained from culture of specific strains, a salt, and an indicator.
CONSTITUTION: A sample of pyruvic acid (P) or a system liberating it is reacted with an analysis kit comprising (A) pyruvic acid oxidase, obtained by culturing strains of Pediococcus Sp. B-0667 (FERM-P No. 4438) and Streptococcus Sp. B-0668, Aerococcus viridans 1FO 12219 and 12317, and (B) a salt consisting of thiamine pyrophosphate, a phosphate, Ca, Co, Mg, and Mn ions, and (C) a hydrogen peroxide indicator to determine the constituent consumed or formed by the reaction. The method is applicable to the determination of an enzyme system of lactic acid, glycerol, adenosine diphosphate to form P.
