1. Способ получения жидкой или сухой бактериальной закваски для производства кисломолочных продуктов, включающий культивирование Lactobacillus acidophilus на ростовой питательной среде, содержащей обезжиренное молоко и водную суспензию 20%-ного кукурузного экстракта с получением маточной закваски, внесение ее в стерилизованное охлажденное до температуры заквашивания ростовую среду, содержащую молоко и лимоннокислый натрий, культивирование, охлаждение и выдержку с последующей фасовкой жидкой закваски или смешиванием последней с защитной средой, замораживанием и сушкой, отличающийся тем, что для получения маточной закваски из Lactobacillus acidophilus используют штамм Lactobacillus acidophilus n.v. 317/402 "Наринэ" ААА, в составе ростовой питательной среды дополнительно используют селенит натрия в концентрации (1,25-1,6)•10-6 мас. %, причем обезжиренное молоко используют с содержанием сухих веществ 9-13% при следующем соотношении компонентов, мас.%:
Водная суспензия 20%-ного кукурузного экстракта - 1,5-5,0
Селенит натрия - 1,25-1,6•10-6
Обезжиренное молоко с содержанием сухих веществ 9-13% - Остальное
Для культивирования маточной закваски в составе ростовой среды молоко используют с содержанием сухих веществ 14-18%, концентрация лимоннокислого натрия в молоке составляет (0,3-0,6)•10-2 мас.%, культивирование осуществляют до конечного титра живых клеток бактерий (4,0-8,0)•109 в 1 мл жидкой закваски.
