Description

The invention relates to a technology for the production of canned concentrates of the first lunch dishes.

A known method for the production of canned food "Indonesian soup with okra", which includes preparing the recipe components, chopping pork on top, blanching and rubbing okra, cutting, freezing, defrosting and rubbing fresh cabbage, shallots and hot pepper, mixing the listed components with salt and hot black pepper, cutting and blanching sweet potato, packing sweet potato, the resulting mixture and bone broth, sealing and sterilization (RU 2284134 C1, 2006).

The technical result of the invention is the production of new canned food using non-traditional plant materials.

This result is achieved by the fact that in the method of producing canned food “Indonesian okra soup”, which involves preparing the recipe components, chopping pork on top, blanching and rubbing okra, cutting, freezing, defrosting and rubbing fresh cabbage, shallots and hot peppers, mixing the listed components with salt and black bitter pepper, cutting and blanching sweet potato, packing sweet potato, the resulting mixture and bone broth, sealing and sterilization, according to the invention, use decorative cabbage , and the components are used in the following ratio of costs, parts by weight:

pork 301.2-378.8 sweet potato 250 decorative cabbage 625 okra 55 hot peppers 25 shallot 45 salt eighteen black pepper 0.4 bone broth before the release of the target product 1000

The method is implemented as follows.

Prescription components are prepared according to traditional technology.

Prepared pork is chopped and ground in a spinning top.

The prepared okra is blanched and wiped.

Prepared fresh decorative cabbage, shallots and hot peppers are cut, frozen, defrosted and wiped.

The listed components in a prescription ratio are mixed with salt and ground black pepper.

Prepared yam cut and blanched in hot water.

Sweet potato, the resulting mixture and bone broth are packaged in a prescription ratio, sealed and sterilized to obtain the target product.

Component costs are given taking into account waste standards and losses of the corresponding types of raw materials. The minimum consumption of pork corresponds to the use of edged pork, and the maximum corresponds to the use of meat pork.

The canned food obtained using the described technology is similar in organoleptic properties to the product according to the closest analogue.

Thus, the proposed method allows to obtain new canned food using non-traditional plant materials without changing the organoleptic properties of the target product.

Method for the production of canned food “Indonesian soup with okra”, which involves preparing the recipe components, chopping pork on top, blanching and rubbing okra, cutting, freezing, defrosting and rubbing fresh cabbage, shallots and hot pepper, mixing the above components with salt and black pepper bitter, cutting and blanching sweet potatoes, packing sweet potatoes, the resulting mixture and bone broth, sealing and sterilization, characterized in that they use decorative cabbage, and the components are used in the following m ratio of costs in parts by weight .:
