Одновременно готовят сахарный сироп, для чего в 0,5 литрах воды помещают 0,5 г кварца, подогревают воду до температуры 65°С и растворяют при постоянном помешивании 150 г сахара. Приготовленный сахарный сироп добавляют в обеззараженную воду с минералами. Во вновь полученный раствор добавляют 30 г японского гриба. Процесс брожения осуществляют в течение 28 суток при ступенчатом снижении температуры. Первые 14 дней брожение осуществляют при температуре от 32°С до 30°С, далее 7 дней - при температуре от 28°С до 30°С и последние 7 - дней при температуре от 25°С до 28°С.
