Известен способ консервирования пантов, включающий термическую обработку с последующим их охлаждением. Причем термическую обработку осуществляют в атмосфере пара при повышении температуры от 35°С до 85°С в течение 1-1,5 мин, а последующее охлаждение ведут при комнатной температуре (15-20°С) в течение 2-3 мин. Термическую обработку и охлаждение проводят многократно (авторское свидетельство СССР №528915, МПК 6 А 01 N 1/02, опубл. 1976 г.). Данный этап повторяют до 10 раз в зависимости от размеров пантов. Недостатком данного способа является длительность процесса консервирования (до 30 дней). Размещение пантов под наклоном в 15° верхушкой вверх без последующих переворачиваний приводит во время жаровой сушки к вытеканию крови через комлевую часть пантов, что, в свою очередь, приводит к осветлению отдельных участков пантов и как следствие к снижению содержания биологически активных веществ. При снижении влаги в продукте до 12-19% процесс консервирования закончен. Длительность консервирования составляет 6-9 дней.Example 1.
