Description

 The invention relates to the alcoholic beverage industry.

 Known special vodka containing water-alcohol infusions of leaves of Manchurian walnut, pine nut and allspice, sugar and water-alcohol liquid / 1 /.

 The disadvantage of this vodka is the presence in its composition of expensive and inaccessible raw materials.

 Known special vodka "Aleksandrovskaya" containing aromatic alcohol of coriander, aromatic alcohol of caraway seeds, aromatic alcohol of a mixture of flowers of linden and mountain ash, sugar syrup and water-alcohol liquid / 2 /.

 And although vodka is enriched with valuable biologically active components of spicy-aromatic raw materials, the multicomponent and high content of caraway aromatic alcohol in it increases its cost.

 Known special vodka containing aromatic alcohol mixtures of ingredients of plant materials, including linden flowers, honey component and water-alcohol liquid / 3 /.

 However, the well-known vodka is not sufficiently enriched with such valuable essential oils as d-terpineol, limonene and cineole, and the use of natural honey, although it enriches vodka with a whole complex of biologically active components, aromatic substances of honey are not fully used, which ultimately slightly reduces organoleptic characteristics finished product.

 The technical result of the present invention is to improve the organoleptic qualities of vodka by the stability of the aroma and its taste, giving the aroma of honey and strawberry tones and expanding the range of special vodkas.

This is achieved by the fact that special vodka containing aromatic alcohol made from a mixture of ingredients of plant materials, including linden flowers, honey component and water-alcohol liquid, according to the invention, plant materials for the preparation of aromatic alcohol additionally contains cardamom, the honey component is used in the form of aromatic alcohol and vodka additionally contains sugar syrup in the following ratio of ingredients per 1000 gave the finished product:
aromatic alcohol of linden flowers and cardamom - 2.5-3.0
aromatic honey alcohol - 48-52
sugar syrup - 11-12
water-alcohol liquid - the rest
It should be noted that for the first time vodka was created containing such an original combination of cardamom essential oils: d-terpineol, terpenyl acetate, cineole, limonene and linden flowers: farnesol, hyperidine, tilitsian, giving a peculiar honey-strawberry aroma to the product.

 It should also be noted that in addition to the complex of biologically active components, all aromatic substances of honey are transferred to the aromatic alcohol of honey, and in the presence of tannins and saponins of linden flowers, all aromatics in the finished product and its stability during storage are preserved.

 These substances (saponins and tannins) with honey enzymes exhibit a synergistic effect at the antioxidant and phytoncide levels, as a result of which they prevent the oxidation of essential oils of cardamom and linden, enhance the transition of honey aromatic substances into an aqueous-alcoholic solution, while maintaining a pleasant honey-strawberry aroma when storing the finished product.

 This is the synergism of the action of all the components that make up vodka.

 Example 1. Vodka is obtained as follows.

 Aromatic alcohols of honey and linden are obtained with cardamom according to generally accepted technology.

 The resulting aromatic alcohols are mixed with a water-alcohol liquid purified on charcoal columns, the strength of vodka is adjusted to 40%, filtered and sent for bottling.

Ready vodka has the following ratio of ingredients, l per 1000 gave the finished product:
aromatic alcohol of linden flowers and cardamom - 2.5-3.0
aromatic honey alcohol - 48-52
sugar syrup - 11-12
water-alcohol liquid - the rest
For the preparation of special vodka is used:
- rectified ethyl alcohol "Extra" according to GOST 5962;
- drinking water according to GOST 2874 with a hardness of up to 1 mol / m ³ for natural water and up to 0.10 mol / m ³ for corrected water;
- natural honey according to GOST 19792;
- linden flowers according to GOST 6518;
- cardamom according to GOST 29052;
- crushed active charcoal grade BAU-A according to GOST 6217.

 Aromatic alcohols of natural and linden honey with cardamom are prepared in accordance with the data given in the table.

 A water-alcohol solution (sorting) is prepared in such a way as to obtain vodka with a strength of 40%.

 The resulting sorting is thoroughly mixed, passed through a coal-cleaning battery with a filtration rate of up to 30 dal / h for regenerated coal.

 Cooked aromatic alcohols of honey and linden blossom with cardamom and sugar syrup are added to the finished vat in the finished vodka. After mixing all the ingredients, the finished vodka is filtered and sent for bottling.

Ready vodka has the following ratio of ingredients, l per 1000 gave:
aromatic alcohol of linden flowers and cardamom - 2.75
aromatic honey alcohol - 50
sugar syrup - 11.5
water-alcohol liquid - the rest
Example 2. Prepare special vodka, as in example 1, only the resulting vodka has the following ratio of ingredients, l per 1000 gave:
aromatic alcohol of flowers of linden and cardamom - 2.5
aromatic honey alcohol - 48
sugar syrup - 11.0
water-alcohol liquid - the rest
For the preparation of aromatic honey alcohol 9.5 kg were taken.

 To prepare the aromatic alcohol of linden flowers and cardamom, 0.9 kg of linden flowers and 0.02 kg of cardamom were taken.

Example 3. Prepare vodka, as in example 1, only the resulting vodka has the following ratio of ingredients, l per 1000 gave:
aromatic alcohol of flowers of linden and cardamom - 3.0
aromatic honey alcohol - 52
sugar syrup - 12
water-alcohol liquid - the rest
For the preparation of aromatic alcohols, 10.5 kg of honey, 0.3 kg of linden flowers and 0.03 cardamom were taken.

With this ratio of ingredients in all three examples, vodka has the following indicators:

The aroma is characteristic of vodka, with light honey and strawberry tones.
The use of the range of aromatic and biologically active substances in the form of aromatic alcohols in the proposed vodka contributes to their maximum use in the finished product, thereby increasing its pharmacological properties.

Special vodka containing aromatic alcohol made from a mixture of ingredients of plant materials, including linden flowers, honey component and water-alcohol liquid, characterized in that plant materials for the preparation of aromatic alcohol additionally contains cardamom, vodka - sugar syrup, and the honey component is used in in the form of aromatic alcohol, in the following ratio of ingredients, l per 1000 gave the finished product:
