Кроме того, технологический процесс изготовления вина был бы достаточно прост, т.е. имел меньшее количество операций и длительность без ухудшения качества готового продукта и его органолептических показателей. Причем при производстве вина не требовалось бы переоборудование производства, себестоимость продукции снижалась и расширялся ее ассортимент. Сухие материалы купажируют до получения однородных партий. Купажи белого вина готовят из белых виноматериалов. Купажи розовых вин получают из розовых виноматериалов или смеси белых 80 - 90% и красных 10 - 20% виноматериалов. Купажи красных вин готовят из красных виноматериалов. Для корректировки цвета допускается использование до 30% белых виноматериалов. В купажи вносят концентрат виноградного сока или сахарный сироп. При необходимости, по результатам испытаний на склонность к помутнениям проводят оклейку бентонитом или другими осветляющими веществами, обработку теплом, холодом, деметаллизацию. Обработанный купаж пастеризуют в течение двух минут при 80 - 85oC, фильтруют, охлаждают до температуры 0 минус 2oC, насыщают диоксидом углерода и разливают в бутылки. В процессе производства вина применяют типовое оборудование, применяемое в винодельческой промышленности.Dry materials are blended until smooth.
