Abstract

Inventia se refera la un produs alimetar fortifiant, constituit din 35...48% proteine precipiatet din lapte, 8...12% lipide provenite din lapte, 35...50% hidranti de carbon, constituitti din lactoza si zaharoza, 1,5...2,5% pulbere de cacao si 4...6% amestec de saruri minerale, constituit din 1,2....1,5% carbonat de potasiu, 1,2...1,5% carbonat de calciu si 0,06...0,09 oxid de magneziu. Procedeul pentru obtinerea produsului alimentator, conform inventiei, se caracterizeaza prin aceea ca laptele de vaca degresat, cu un continut de 0,05% grasime, 8,5% substanta uscata si maxim 20 degree T aciditate, este pasteurizat si racit la 37...38 degree C, apoi se supune precipitarii cu o solutie de 10% HCl, pîna la atingerea pH-ului de 4,4, dupa care cazeina precipitata se separa de zer, se spala cu apa de trei ori succesiv, la 40, 30 si 20 degree C, apoi cazeina se centrifugeaza pîna la 40....45% substanta uscata negrasa, se solubilizeaza prin adaos de Ca(OH)2 pîna la pH de 6,5, obtinînd cazeinatul de calciu solubil cu aproximativ 25% substanta uscata, care se amesteca în proportie de 1/2 cu lapte de vaca nominalizat, cu continut de 1,5...1,7% grasime, 8,5....8,8% substanta uscata negrasa, apoi se adauga zaharoza cu pulbere de cacao dizolvate în apa si pasteurizate la 80...85 degree C, timp de 5 min, dupa care se adauga un amestec de saruri minerale, constituit din carbonat de potasiu, carbonat de calciu, oxid de magneziu, apoi amestecul se agita 10 min si concentreaza sub vid pîna la 46....48% substanta uscata, se omogenizeaza la 60 degree C si 175 daN/cm2 si se usuca prin pulverizare printr-un procedeu în sine cunoscut.
