Abstract
Przedmiotem zgłoszenia jest sposób wspomagania procesu pasteryzacji termicznej płynnych surowców jajczarskich w celu uzyskania wyższej skuteczności redukcji mikroflory w trakcie przechowywania chłodniczego bez pogorszenia cech technologicznych, charakteryzujący się tym, że przed pasteryzacją termiczną przeprowadza się działanie ultradźwięków o częstotliwości 20 kHz i mocy od 1,2 do 12 kW przez 4 minuty do 20 minut.
