Przedmiotem zgłoszenia jest sposób wspomagania procesu pasteryzacji termicznej płynnych surowców jajczarskich w celu uzyskania wyższej skuteczności redukcji mikroflory w trakcie przechowywania chłodniczego bez pogorszenia cech technologicznych, charakteryzujący się tym, że przed pasteryzacją termiczną przeprowadza się działanie ultradźwięków o częstotliwości 20 kHz i mocy od 1,2 do 12 kW przez 4 minuty do 20 minut.The subject of the application is a method of supporting the thermal pasteurization process of liquid egg raw materials in order to achieve higher efficiency of microflora reduction during cold storage without deterioration of technological properties, characterized in that before thermal pasteurization, ultrasound is applied at a frequency of 20 kHz and a power of 1.2 to 12 kW for 4 to 20 minutes.
