Abstract

Przedmiotem wynalazku jest sposób wytwarzania tortilli, przy czym tortilla to rodzaj plaskiego okraglego placka o srednicy od 6 do 30cm z masy lub maki kukurydzianej albo pszennej, stosowanego jako pieczywo i baza do innych potraw. Sposób wytwarzania tortilli, polega na dozowaniu skladników do dziezy, mieszaniu suchych skladników a nastepnie dodaniu wody i dalszym mieszaniu a otrzymane ciasto dzieli sie na kesy, które poddaje sie procesowi dojrzewania, zas po dojrzewaniu prasuje sie je na odpowiednia grubosc przy uzyciu prasy o odpowiedniej temperaturze, po czym wypieka sie je a nastepnie schladza. Sposób ten charakteryzuje sie tym, ze mieszanie prowadzi sie w dziezy zaopatrzonej we wziernik i oswietlenie typu LED gdzie prowadzi sie obserwacje koloru ciasta i na podstawie wyników obserwacji dobiera sie czas mieszania, natomiast po prasowaniu otrzymane placki transportuje sie do pieca a w czasie transportu przypieka sie je przy uzyciu wirujacych grzalek, zas kolejny proces pieczenia prowadzi sie przy uzyciu podgrzewanej tasmy a wypieczone placki poddaje sie dzialaniu promieni UV.The subject of the invention is a method for producing tortillas, wherein tortillas are a kind of flat round cake with a diameter of 6 to 30 cm made of corn or wheat flour or used as bread and base for other dishes. The method of making tortilla consists in dosing ingredients into the bowl, mixing dry ingredients and then adding water and further mixing, and the resulting dough is divided into kes, which undergoes the ripening process, and after ripening, they are pressed to the appropriate thickness using a press at the appropriate temperature , then they are baked and then cooled. This method is characterized by the fact that mixing is carried out in a bowl equipped with a sight glass and LED type lighting where observation of the dough color is carried out and the mixing time is selected based on the observation results, while after pressing the obtained cakes are transported to the oven and baked during baking using rotating heaters, and the next baking process is carried out using heated tape and the baked cakes are exposed to UV rays.
