Abstract

This utility model disclosed the process of producing black rice otap with ginger product comprises of a value-added native delicacy and also a healthy snack item for human consumption which can be a good potential for commercialization wherein at least the process of making black rice otap with ginger comprising the steps: grinding of the unpolished black rice and placed in a clean container; cleaning and chopping of ginger until finely ground; mixing of ground black rice, ground ginger, white sugar, iodized salt, oil, egg, yeast, vanilla and water; kneading of mixture until dough becomes smooth and elastic; rolling of the dough mixture on the floured tray until evenly distributed; cutting the dough into desired size and shape; sprinkling of sugar on one side of the shaped dough; transferring of the sprinkled shaped dough to the greased baking sheets; and baking of the shaped dough into a preheated oven until done as black rice otap with ginger.
