Abstract

A utility model which relates to the production of mango (Mangifera indica) and water spinach (Ipomoea aquatica) jam following the procedure: (a) washing the mango and water spinach thoroughly; (b) peeling and separating of the mango pulp from the seeds; (c) separating of the water spinach leaves by the stem and cutting it into pieces; (d) blending of the 750 g mango from step (b), 250 g water spinach from step (c), and brown sugar until homogenized; (e) cooking of the mixture and stirring occasionally to avoid scorching; (f) adding of calamansi juice (2 ml) and lemon rind to the mixture while cooking; (g) continuous cooking of the mixture until sticky viscosity is achieved and; (h) pouring of the jam into sterilized jars and sealing tightly.
