Abstract

The present application generally relates to bread production but more particularly to a process of producing bread from squash (Cucurbita maxima) vegetable- moringa (Moringa oliefera) leaves. Said process comprises: washing the maltmggay leaves; blanching the malunggay leaves and setting it aside; boiling the squash and mashing it finely; mixing the ingredients - malunggay leaves, mashed cooked squash, water, sugar, salt, milk and chili; mixing well in a large bowl- the flour, milk, and mixture of blended malunggay leaves, water and squash; flatting, cutting and forming the mixture into a ball; letting it rise for one hour; baking for 15-20 minutes; removing it from oven; and packing the finished product
