This invention disclosed a miracle fruit (Cresentia cujete) barquettes consisting of: for barquette crust: 40.5 pcnt all purpose flour, 8.5 pcnt unsalted butter, 0.60 pcnt salt, 1.80 pcnt egg yolk, and 5.16 pcnt miracle fruit juice; for barquette filling: 13.4 pcnt miracle fruit juice, 6.7 pcnt sugar, 1.7 pcnt egg yolk, 0.84 pcnt cornstarch and 1.7 pcnt flavoring for meringue: 5.17 pcnt egg white, 0.12 pcnt cream of tartar, 0.12 pcnt salt and 13.6 pcnt granulated sugar and the process of making thereof to produce a nutritious, good for the health and safe from deleterious organisms.
