Abstract
Un procedimiento para la fabricacion de conserva a base de sangre animal tipo mousse con vida util prolongada comprendiendo las etapas: Recepcion (materia prima, insumos y aditivos y envases y tapas), almacenamiento (materia prima, insumos y aditivos y envases y tapas), hidratado, coccion, cutterado, envasado, exhausting, cerrado, lavado, estibado, esterilizado, enfriado, rayos x, limpieza, etiquetado, encajonado y almacenamiento de producto terminado. El producto tiene vida util en almacenamiento a temperatura ambiente de 49 meses y 15 dias, sin necesidad de refrigeracion en su envase original, hermeticamente cerrado, almacenado y mantenido en ambiente fresco, limpio y seco.
