Abstract

An oven-finished French fried potato product comprises from 32 % to 50 % bulk moisture and from 8 % to 25 % total fat and has a Texture Value of at least 200. The Texture Value is the maximum force or the area under the force deformation curve during the first one-third of a specific compression test. The product may be shoestring-cut fries. The product may have a surface water activity of less than or equal to 0.55.
