"The french fries that have been cooked in the oven include 32-50% bulk moisture, 8-25% total fat, 55-80% internal moisture, a surface water activity less than or equal to 0.55, and a texture value (maximum force [gram] or area under the force deformation curve [gram-sec] within the first third of a particular compression test) which is at least about 200.
