The french fries of the present invention which have been baked in oven can be distinguished from commercially available and hitherto known oven French fries in that they have a combination of attributes, especially bulk moisture, total fat content, internal moisture, surface water activity and texture value, which makes them virtually impossible to distinguish from deep-fried french fries! "The french fries that have been cooked in the oven include 32-50% bulk moisture, 8-25% total fat, 55-80% internal moisture, a surface water activity less than or equal to 0.55, and a texture value (maximum force [gram] or area under the force deformation curve [gram-sec] within the first third of a particular compression test) which is at least about 200.
