Abstract
Det beskrives en fremgangsmåte for fremstilling av et fiberrikt kaffeprodukt, og det resulterende produktet. Delvis ekstrahert, brent og malt kaffe bringes i kontakt med vann under betingelser som er effektive til å ekstrahere en fiberrik kaffe- ekstrakt som inneholder en høy konsentrasjon av leselige fibre. Den fiberrike ekstrakten kan eventuelt underkastes ultrafiltre- ring for å tilveiebringe et konsentrert, fiberrikt retentat. De fiberrike produktene kan anvendes for å forsterke kaffe eller andre spiselige produkter med loselige fibre. Den delvis ekstraherte, brente og malte kaffen oppnås fortrinnsvis ved hjelp av en første, mild, atmosfærisk ekstraksjon av brent og malt kaffe.
