Abstract

Det beskrives et surt søtningsmiddel som er et enkelt tilsetningsmiddel som gir både søthet og surhet til et næringsmiddel eller annen matvare. Fortrinnsvis har det sure søtningsmiddel en lav glykemisk indeks for generelt å forbedre den ernæringsmessige profil av den matvare det tilsettes til. Det tilveiebringes også en fremgangsmåte for å fremstille en matvare ved bruk av det sure søtningsmiddel. Fremgangsmåten omdanner et sirup-søtningsmiddel til den sure søtningsmiddeltilsetning. I en foretrukket form anvender fremgangsmåten en enzymblanding av glukoseoksydase og katalase for å omdanne en del av glukosen i sirup-søtningsmidlet til glukonsyre.
