Abstract

A brine injector has a collection of needles mounted in a reciprocating plate with a brine reservoir. The needles can be closed off and opened automatically during the downstroke of the plate when they are in contact with the meat. Above each needle is a closing tube with a plunger. The tube is open to the brine reservoir except when the needle is delivering brine. All the plungers are operated together. The brine is distributed accurately in the meat giving salt contents with 2 or 3% of the desired value at all points. No brine needs to be recycled.
