Abstract
1,112,871. Injecting brine into meat or fish. J. G. DALAUDIER. 19 April, 1966 [28 April, 1965], No. 17096/66. Heading A2D. An apparatus for injecting brine into meat or fish, especially pig meat, by means of hypodermic needles 19 comprises a rectangular container 1, a pneumatic piston-operated pressure plate 3 having holes for the passage of the needles 19 mounted on the inside face of a parallel pneumatic piston-operated plate 4 which plate 4 includes a hole for the passage of a piston rod 17b from the plate 3 therethrough, and a chamber 22 from which brine fed via conduits 27 is passed to the needles 19. The brine is supplied from a source 43 to a dispensing tank 44 connected at its top end to a compressed air filled tank 47 of sufficiently large capacity that the brine when fed to the needles 19 is delivered at a substantially constant pressure. In use, after insertion of meat into the container 1, manual closure of a sliding lid 9 actuates automatic control by means of limit switches, timers and cams which causes pressure plate 3 to compress the meat and, subsequently, plate 4 to move so that the needles 19 pass right through the meat and then withdraw, brine being pumped into the meat during the withdrawal period. Finally an end panel le is automatically withdrawn, allowing the treated meat to be ejected from the container 1, and the tank 44 is refilled with brine.
