Abstract

1,251,473. Poultry. STEGGLES PTY, Ltd. 4 May, 1970 [20 May, 1969], No. 21297/70. Heading A2E. Self-basting poultry is prepared by injecting butter, fat, or other suitable basting material longitudinally into the muscle fibres and puncturing the meat with a probe transversely to the fibres to at least the depth of the deposits of basting material, the legs being prepared by injecting with a syringe having a hollow needle with a single opening near the tip, the needle being inserted through the openings of the skin at the hock joints, the breast being prepared by injecting with a syringe having a hollow needle with several openings along its length, the needle being inserted into the breast muscle from the posterior end of the keel bone and the anterior end of the breast along the clavicle. A suitable injection apparatus is shown in section in Fig. 2, butter &c from a heated container 3 being passed to a chamber 9 via valve 11 and being injected by needle 8 via valve 12 by the action of piston 10, driven by cylinder 13, the reciprocation of the piston and the valves resulting in uniform changes of basting material.
