Abstract
Potatoes are peeled by steam at 130 - 140 degrees C for 15 to 30 secs. then given a superheating treatment by hot air jet, containing some steam, at 130 - 800 degrees C, pref. 400 degrees C and at 1 - 8 m/s., and followed by canning under vacuum, are then heated and cooked. The process is carried out continuously, and unsatisfactory potatoes are sorted and thrown out by photoelectric means. The canned potatoes have a good shelf life.
