Abstract
La presente invención divulga una máquina para el lavado del café al que se le ha degradado previamente el mucílago por fermentación natural o con la adición de las enzimas pectinolíticas, en donde el proceso de degradado minimiza el impacto medioambiental del café en conjunto con el proceso de lavado. El proceso descrito en la presente invención comprende: i) despulpado de los granos de café; ii) transporte del café a un sistema de selección con el fin de eliminar los granos de café sin despulpar y la gran mayoría de la pulpa; iii) transporte de los granos de café sin pulpa a un tanque; iv) almacenamiento de los granos de café sin pulpa en tanques que permiten la degradación del mucílago ya sea a través de la fermentación natural o mediante el uso de enzimas pectinolíticas; v) transporte del grano de café desde el tanque de fermentación hacia la lavadora mecánica; vi) eliminación del mucílago degradado, permitiendo que el café lavado esté listo, para iniciar la fase de secado.The present invention discloses a machine for washing coffee to which the mucilage has previously been degraded by natural fermentation or with the addition of pectinolytic enzymes, where the degradation process minimizes the environmental impact of the coffee in conjunction with the process of washed.
