Abstract

To provide an oil-based food product in which grain and solid-liquid separation are difficult to occur, which oil-based food product is not hard even at low temperatures and exhibits good melting feeling in the mouth, and an oil and fat composition with a low trans fatty acid content that is used in production of such an oil-based food product. [Means for Solving Problem] The oil and fat composition of the present invention is characterized by satisfying the following conditions of (a) to (e): (a) an X3 content is 1 to 7% by weight, (b) an X2U content is 3 to 23% by weight, (c) an XU2 content is 15 to 37% by weight, (d) a U3 content is 40 to 65% by weight, (e) the total content of XXU and UXU is 3 to 17% by weight, (wherein X: saturated fatty acid having 16 carbon atoms or more, U: unsaturated fatty acid having 16 carbon atoms or more).
