Abstract

Se describe un proceso para preparar un ingrediente de proteinas de leche concentrado que comprende las etapas de: proporcionar una solucion de retenido por membrana que tenga una proteina de leche kappa-caseina, ajustar el contenido de iones divalentes de la solucion de proteinas hasta un nivel predeterminado en el cual no se forme un gel despues del tratamiento con enzimas de coagulacion de leche, anadir una enzima de coagulacion de leche grado alimenticio bajo condiciones en las que la kappa-caseina se convierta en para-kappa-caseina mientras permanece en solucion, concluir la conversion mediante la remocion o inactivacion de la enzima y concentrar la solucion. El ingrediente de concentrado de proteinas de leche resultante se usa en la produccion de queso.
