Abstract
Un proceso para preparar queso, que comprende los pasos de: iniciar con una composicion de leche que tiene un contenido de grasa mayor de 0.3%, agregar una preparacion de goma a la leche, agregar un iniciador a la leche para formar una leche de queso, cuajar la leche de queso, cortar el coagulo para separar el cuajo y el suero, drenar el suero del cuajo y darle forma al cuajo y enfriarlo. La diferencia sobre la tecnica anterior es la adicion de goma a la leche antes de anadir el iniciador.
