Abstract
La invencion proporciona un método para reducir el contenido de grasa de gluten de trigo o aislados de proteína de trigo. En una modalidad particularmente preferida, el gluten o W.P.I. se trata con alcoholes ácidos. El gluten con un contenido reducido de grasa o W.P.I. resultante exhibe propiedades funcionales y sensoriales superiores.
