Abstract
Un método para preparar productos lácteos los cuales tienen vida de almacenamiento incrementada mediante la incorporacion de dioxido de carbono en tales productos, que comprende poner en contacto una fraccion de leche fluida de un alimento lácteo con dioxido de carbono, mezclar la fraccion de leche fluida y el dioxido de carbono en una solucion y, someter la solucion a condiciones suficientes para alcanzar un estado estable entre la fraccion de leche fluida y el dioxido de carbono disuelto. La invencion está adaptada para productos lácteos de consumo de una amplia variedad, tales como leche, suero de la leche, yoghurt, crema agria, requeson, queso ricotta, otros quesos suaves, semi-suaves y duros, mezclas de helado y similares.
