Abstract

一种液态乳的包装工艺,涉及液态乳的生产,特别是其保鲜技术。以生鲜牛乳、还原乳等为主的原料奶,经过预处理、采用巴氏杀菌或超巴氏杀菌,灌装到经杀菌或灭菌的包装容器中,在包装容器中充入一定量的无菌CO2和N2混合气体后,密封包装。由于本发明在密封包装前充入无菌CO2和N2混合气体,解决了以往抽真空包装成形差,不方便运输,设备投入大的缺陷,也克服了带空气包装,产品保鲜期太短的缺陷。

一种液态乳的包装工艺
技术领域
本发明涉及液态乳的生产,特别是其保鲜技术。
背景技术
国外的液体乳主要以保鲜的巴氏奶为主,这主要与其完善的冷链系统及经济水平有关,近几年国内的液体奶市场增长迅速,但在产品的保质期上,要么是3天内的保鲜乳,要么是保质期较长的UHT奶,产品结构不合理。
延长货架期液态乳(ESL)在乳品工业中是个热点方向,它的货架期介于巴氏杀菌乳和灭菌乳之间。
由于货架期、营养价值、对产品风味等综合因素考虑,因此非灭菌产品的延长货架期成为必要。首先该产品对生产者有益,同时对批发商和零售点有益,他们无须每日运送,可以几天陈列出来,且不会出现产品的变质问题(不象巴氏杀菌产品)。同时如果产品不是在无菌条件下灌装(对于UHT产品通常采用的灌装方式),容易实现,且生产费用低。最后当提供长货架期产品,且质量稳定,同时具有巴氏杀菌产品的风味,这种产品将肯定受到青睐,而ESL产品满足了这方面的要求。
发明内容
本发明目的在于为人们提供一种长货架期或保鲜期长的一种液态乳的包装工艺。
本发明以生鲜牛乳、还原乳为原料,经过预处理、采用巴氏杀菌或超巴氏杀菌,其特点是杀菌后的液态乳灌装到经杀菌或灭菌的包装容器中,并充入气体浓度为:5~500mMol/L的无菌CO2和N2混合气体后,密封包装。
由于本发明在密封包装前,在每升液态乳充入气体浓度为5~500mMol的无菌CO2和N2混合气体,解决了以往抽真空包装成形差,不方便运输,设备投入大的缺陷,也克服了带空气包装,产品保鲜期太短的缺陷。
上述气体的体积比为:CO2∶N2=10∶1~1∶10。
密封的液态乳在2~8℃下贮藏。
具体实施例
例一:
以生鲜牛乳、奶粉为主的原料奶,经过预处理后,采用巴氏杀菌或超巴氏杀菌,(巴氏杀菌在72℃下,杀菌时间大等于15秒;或巴氏杀菌在90℃下,杀菌时间大于等于5秒;或超巴氏杀菌在138℃下,杀菌时间大于等于2秒),将杀菌后的液态乳灌装到经杀菌或灭菌的包装容器中,在每升液态乳充入无菌CO2和N2混此合气体,使混合气体浓度达到5mMol,充毕,密封包装。上述CO2与N2的体积比为1∶10至10∶1。灌装密封的液态乳产品在2~8℃下,贮藏并销售。
例二:
以生鲜牛乳或还原乳为原料奶,经过预处理后,采用巴氏杀菌或超巴氏杀菌,(巴氏杀菌在72℃下,杀菌时间大于等于15秒;或巴氏杀菌在90℃下,杀菌时间大于等于5秒;或超巴氏杀菌在138℃下,杀菌时间大于等于2秒),将杀菌后的液态乳灌装到经杀菌或灭菌的包装容器中,在每升液态乳充入无菌CO2气体,使CO2气体浓度达到500mMol,充毕,密封包装。灌装密封的液态乳产品在2~8℃下,贮藏并销售。
例三:
以生鲜牛乳或还原乳为原料奶,经过预处理后,采用巴氏杀菌或超巴氏杀菌,(巴氏杀菌在72℃下,杀菌时间大于等于15秒;或巴氏杀菌在90℃下,杀菌时间大于等于5秒;或超巴氏杀菌在138℃下,杀菌时间大于等于2秒),将杀菌后的液态乳灌装到经杀菌或灭菌的包装容器中,在每升液态乳充入无菌N2气体,使N2气体浓度达到300mMol,充毕,密封包装。灌装密封的液态乳产品在2-8℃下,贮藏并销售。

Claims (2)

1、一种液态乳的包装工艺,以生鲜牛乳、还原乳为原料奶,经过预处理、采用巴氏杀菌或超巴氏杀菌,其特征在于杀菌后的液态乳灌装到经杀菌或灭菌的包装容器中,并充入气体浓度为:5~500mMol/L的无菌CO2和N2的混合气体后,密封包装。
2、根据权利要求1所述一种液态乳的包装工艺,其特征在于气体的体积比为:CO2∶N2=10∶1~1∶10。
