Abstract
Procedimiento para fabricar una leche de almendras de frutas, en el cual se trituran las almendras de frutas en agua, para obtener una dispersion acuosa; se efectua una extraccion acuosa sobre esa dispersion, se descartan los insolubles del extracto acuoso; se aísla una fraccion rica en proteínas y/o en lípidos del extracto acuoso; se homogeneiza esa fraccion y se esteriliza; y utilizacion de esa leche de almendras de frutas que se obtiene de esa manera, para fabricar productos alimenticios.
