Abstract
La presente invención se relaciona con un método para producir levadura. Se relaciona específicamente con un método para producir levadura biológica, que comprende el uso de sustratos de origen biológico, específicamente un sustrato biológico que hace posible el suplemento de los requerimientos nutricionales en la levadura en términos de fósforo. El método de la presente invención hace posible obtener levadura biológica y extractos de levadura biológica de acuerdo con el Reglamento de la Unión Europea (CE) 834/2007. De acuerdo con la invención, la composición biológica rica en fósforo se obtiene mediante hidrólisis y solubilización de por lo menos un sustrato de una planta de origen biológico que comprende desde 2 g hasta 18 g de fósforo por kg de producto, del 60% al 80% del cual está en la forma de ácido fítico. El sustrato preferido de acuerdo con la invención es salvado de trigo.
