Abstract

La presente invención se refiere a productos alimenticios que comprenden un componente sólido comestible, en donde el componente sólido comestible tiene un contenido de aceite menos o igual a aproximadamente 15 gramos/onza; y un componente emulsionante de grasa aplicado tópicamente al componente emulsionante de grasa comprende un componente de grasa comestible; y un componente emulsionante con un valor de balance hidrofílico-lipofílico (HLB) menos o igual a aproximadamente 9 o un componente de lecitina con un porcentaje de productos insolubles en acetona (AI) en el intervalo de aproximadamente el 20 a aproximadamente el 90 y un porcentaje de fosfatidil-colina (PC) de aproximadamente el 20 a aproximadamente el 90, en donde el componente emulsionante o el componente de lecitina se dispersa o se solubiliza en el componente de grasa comestible. Los métodos para producir tales productos alimenticios mediante la dispersión o solubilización del componente emulsionante o del componente de lecitina en el componente de grasa comestible para obtener el componente emulsionante de grasa; y aplicar tópicamente el componente emulsionante de grasa al componente sólido comestible.
