Abstract

La presente invención se refiere un proceso para la manufactura de una emulsión de agua en aceite, caracterizado porque comprende: • 10 a 85% en peso de aceite líquido; •0.5% a 50% en peso de grasa en polvo que comprende grasa sólida; • 10 a 85% en peso de fase acuosa; •0.005 a 5% en peso de lecitina; y •0.01 a 5% en peso de monoglicérido; que comprende las etapas de: a) proporcionar una solución de a lo más de 5% en peso de aceite líquido, con base en la cantidad total de aceite líquido, que comprende por lo menos 50% en peso de lecitina disuelta, basado en la cantidad total de lecitina,; y por lo menos 50% en peso de monoglicérido disuelto, con base en la cantidad total de monoglicérido; en donde la temperatura de la solución es de por lo menos 50 grados Celsius; b) proporcionar un sistema continuo de aceite que comprende por lo menos 75% en peso del aceite líquido, basado en la cantidad total de aceite líquido, en donde el sistema tiene una temperatura de 0 a 20 grados Celsius; c) poner en contacto la solución proporcionada en la etapa "1" con el sistema proporcionado en la etapa "2"; d) combinar la mezcla proporcionada en la etapa "3" para proporcionar una emulsión de agua en aceite; en donde cualquiera de los ingredientes restantes se adicionan completamente en la etapa "2", etapa "3" o etapa "4" o se adiciona en partes en cualquier combinación en la etapa "2", etapa "3" y la etapa "4".
