Abstract

La presente invención se refiere a una composición de sustituto de crema líquido caracterizada porque comprende: a) entre 4% y 10% de aceite vegetal; b) entre 0.1% y 3% de proteína; c) entre 1% y 5% de maltodextrina; d) entre o.1% y 30% de sacarosa; e) entre 0.002% y 0.2% de carragenano de lambda; f) entre 0.02% y 1% de goma arábiga; y g) entre 0.05% y 1% de emulsificante con bajo peso molecular, en donde el emulsificante con bajo peso molecular comprende monoglicéridos de ácidos grasos y ésteres de ácido de diacetil tartárico de monoglicéridos de ácidos grasos en una proporción de 1:2 y 1:5.
