Abstract

Los trozos desmenuzados de lípidos e inulina de origen vegetal se preparan al proporcionar una composición de gel de inulina; proporcionar una composición lipídica de origen vegetal en forma líquida; mezclar la composición lipídica de origen vegetal en forma líquida con la composición de gel de inulina para proporcionar una composición líquida de lípidos/inulina que comprende de aproximadamente 5 % a aproximadamente 60 % de gel de inulina; y reducir la temperatura de la composición líquida de lípidos/inulina con mezclado continuo hasta una temperatura de tal manera que la fase de la composición de lípidos/inulina pasa de líquida a suficientemente sólida de tal manera que la composición de lípidos/inulina se separa en trozos desmenuzados discretos de lípidos e inulina de origen vegetal.
