Abstract

La presente proporciona una composicion líquida para mejorar el pan, estable durante el almacenamiento, la cual comprende: entre el 30 y el 70% en peso deun aceite de triglicérido vegetal; entre el 2,5 y el 15% en peso de grasa y/o emulsionante; entre el 0,05 y el 5% en peso de partículas enzimáticas granuladas,donde el 70% de las partículas tienen un tamano superior a 50um; y entre 5 y 50% en peso de otros ingredientes para mejorar el pan.
